Murgh Afghani, also known as Afghani Chicken, is a rich and creamy dish that originates from North Indian and Mughlai cuisines, inspired by Afghan flavors. This dish is known for its luxurious texture, achieved by marinating tender chicken pieces in a blend of yogurt, cream, aromatic spices, and nuts. Lightly spiced and bursting with buttery goodness, Murgh Afghani offers a melt-in-the-mouth experience that feels both comforting and royal. Perfect to serve with naan or a fragrant pulao, this mild yet flavorful recipe is sure to impress your family and guests alike.

 

Ingredients

  • Chicken – ½ kg

  • Yogurt – 1 cup

  • Fresh cream – 1 cup

  • Kasuri methi (dry fenugreek leaves) – ½ teaspoon

  • Green chilies – 4

  • Onion – 1 (small)

  • Garam masala – 1 teaspoon

  • Almonds – 6

  • Cashew nuts – 4

  • Pepper powder – 1 teaspoon

  • Butter – 2 tablespoons

  • Salt – 1 teaspoon

  • Sugar – ½ teaspoon

  • Ginger-garlic paste – 1 teaspoon

Preparation:

  1. Make the Masala Paste:
    In a mixer, blend together yogurt, cream, kasuri methi, green chilies, onion, garam masala, almonds, cashew nuts, pepper powder, butter, salt, sugar, and ginger-garlic paste into a smooth paste.

  2. Marinate the Chicken:
    Transfer the masala paste into a bowl. Add the cleaned chicken pieces and mix well so that all pieces are coated. Cover and let it marinate for at least 1 hour.


Cooking:

  1. Heat 2 tablespoons of butter in a heavy-bottomed pot.

  2. Once the butter melts, add only the marinated chicken pieces and fry them gently until both sides are slightly golden.

  3. Now, add the remaining masala paste into the pot and cook for 1 minute.

  4. Add 1 cup of water, cover the pot with a lid, and let it cook for 3 minutes.

  5. Turn off the heat. The chicken will be soft, buttery, and full of flavor.


Serving Suggestion:

Serve Murgh Afghani hot with naan, tandoori roti, or even jeera rice. Enjoy the rich, buttery flavors that melt in your mouth!
